Bruno Marti

Owner and Chef, La Belle Auberge Restaurant
Richmond, British Columbia

Bruno MartiBruno began his career as a 15-year old apprentice in Switzerland, moving to Canada in his early 20's where he started at the Queen Elizabeth Hotel in Montreal. After working as Executive Chef for Cara Operations, Bruno was appointed Manager of Catering for Canadian Pacific Airlines in 1972, a position he held for 12 years. Since 1980, Bruno has been the Chef and Owner of La Belle Auberge Restaurant in Ladner, BC. The menu at this renowned establishment reflects Bruno's philosophy that dining should be a culinary adventure. This personal perspective has had telling effect on the development of Canada's culinary teams over the past 20 years.

Bruno's first experience in international competition came as Captain of the Western Canadian Team that traveled to Frankfurt in 1976. Over the ensuing years, Bruno has made valued contributions to Canada's regional and national culinary teams as both a Member and a Manager. And while every medal has been cause for celebration and another benchmark of accomplishment, the highlight for Bruno was the 1984 World Culinary Olympics, when Team Canada outshone 32 other national teams to become the first Canadian team in history to win a World Championship!

In a quarter century of sharing his experience, talents and insights, Bruno's contributions have been distinguished and significant, and were most recently recognized by the CFCC with his selection as 1997 "Chef of the Year"

From his perspective, Bruno is especially proud of the role he has been able to play in furthering world-wide exposure of Canadian food products: "The culinary diversity of our country provided wonderful opportunities for adventurous and distinctive menus. Preparation and presentation of quail or rabbit with wild Canadian mushrooms, for example, has broadened international awareness of what Canada has to offer and fostered growing interest in our unique cuisine."
